
While I love to cook and try new recipes, there are some days where I want something that is just as easy as it is delicious. These 3 recipes are great for everything from last minute company to a meal to enjoy while relaxing and watching Netflix.
1) 15 Minute Pad Thai

This great recipe from “www.purewow.com” is so tasty and even quicker than take-out. You could easily dress this meal up or down depending on the occasion based on how you present it.

Ingredients
1 pound wide rice noodles
2 tablespoons vegetable or peanut oil
1 bunch green onions, thinly sliced
1 tablespoon grated ginger
1 pound ground pork
½ cup chicken broth
2 tablespoons soy sauce
2 tablespoons rice vinegar
2 teaspoons sriracha
3 cups mustard greens, roughly torn
½ cup bean sprouts
½ cup chopped peanuts
Directions
1. Fill a medium pot with water and bring to a boil over medium heat. Place the noodles in a large bowl and cover with the boiling water. Let sit until tender, 5 to 7 minutes.
2. Meanwhile, heat the oil in a large skillet. Add the green onions and ginger; cook until softened, about 2 minutes. Add the pork and cook until it’s well browned, about 5 minutes.
3. Add the chicken broth, soy sauce, rice vinegar and sriracha to the skillet. Bring the mixture to a simmer over medium heat and cook until reduced slightly, about 3 minutes.
4. Add the mustard greens and toss until wilted, 1 minute. Add the softened rice noodles and toss well to combine. Garnish with bean sprouts and peanuts.
2) Broccoli Pasta

This creamy pasta from abeautifulmess.com is the perfect savoury dinner. Its quick and easy and very tasty!
2-3 servings
Ingredients
9 oz. fettuccine
3 cloves garlic minced
1 tablespoon butter
2 teaspoons olive oil
2 cups seafood stock
1 1/4 cups whole milk
1/2 cup grated Parmesan cheese
1 cup chopped broccoli florets
salt + pepper to taste
chopped parsley for garnish
Instructions

First, sauté the garlic in the butter and olive oil over medium heat for 1-2 minutes. Then add the noodles, stock, milk and broccoli. Bring to boil, cover, and reduce heat to a simmer for 8-9 minutes. Remove the lid and allow to cook for another 8-9 minutes until the liquid has mostly evaporated/absorbed into the noodles and broccoli. Toss in the cheese during this last 8-9 minutes of cooking.

As you could probably tell from the photo before the pasta is cooked, I used a fresh (store bought) pasta. You could easily use a dry pasta instead, but you may need to cook the dish covered for an additional 2-3 minutes as fresh pasta cooks a little faster than dry.

Taste and then season with salt and pepper. Garnish with a little chopped parsley and some more grated cheese and enjoy!
I love cooking and trying new foods, but I’m usually too lazy to cook. My go-to lazy meal is macaroni and cheese, I’m usually always finding myself craving it. I will make noodles and make my own cheese sauce! Honestly, I only cook when nobody’s home though which isn’t too often
